Family Favorite Chicken And Stuffing
- 1 (6 oz.) pkg. chicken stuffing mix
- 1/2 c. chopped carrots
- 1/2 c. chopped celery
- 1/2 c. chopped onion
- 1 can cream of mushroom soup
- 1/2 c. milk
- 1/2 tsp. chopped parsley
- 6 skinless, boneless chicken breast halves (1 1/2 lb.)
- salt and pepper
- Put chicken pieces in bottom of a 2 or 3-quart shallow baking dish.
- Mix mushroom soup with 1/2 cup milk and pour over chicken. Set aside.
- Prepare stuffing mix according to package directions but adding carrots, onion and celery with seasoning packet.
- Pour stuffing over chicken mixture.
- Heat oven to 400u0b0.
- Cover with foil and bake 45 minutes.
- Uncover and bake 15 minutes longer, until chicken is fork-tender.
- May not take that long.
- (Chicken breasts can be sliced or cut into small chunks before cooking.)
