Southern Fried Chicken
- 3 lb. chicken parts
- 1 Tbsp. chicken fat or oil for frying
- 1/2 c. flour
- 1 tsp. seasoned salt
- 1/2 tsp. paprika
- 1/4 tsp. poultry seasoning
- 1/4 tsp. onion or garlic powder
- 1/8 tsp. black pepper
- 1/2 c. water
- Select a large, nonstick skillet with a tight fitting lid. Remove all skin and visible fat from chicken.
- Combine flour and spices in plastic bag or bowl.
- Shake or roll chicken in seasoned flour.
- Coat all chicken before heating oil, then heat oil in skillet and add chicken.
- Brown over medium heat about 10 to 12 minutes per side until golden brown on all sides.
- Add 1/2 cup water to chicken.
- Cover tightly.
- Cook over low heat for 30 minutes.
- Remove cover.
- Turn up heat and cook off remaining liquid.
