Split Pea Soup
- 8 c. water
- 1 c. dry split green peas
- 1/2 c. dry baby lima beans
- 1/8 c. uncooked barley
- 1 large yellow onion, chopped
- 2 bay leaves
- 1 tsp. celery seed
- 2 carrots, chopped
- 2 stalks celery, chopped
- 1/2 pkg. beef stew seasoning mix
- 2 potatoes, chopped
- 1/2 tsp. paprika
- 2 Tbsp. parsley flakes
- 1 tsp. basil
- 1/4 tsp. pepper
- Bring water, split green peas, baby lima beans, barley, onion, bay leaves, celery seed, carrots, celery and beef stew seasoning mix to a boil in a large stockpot; cover, reduce heat and simmer 1 1/2 hours.
- Add potatoes, paprika, parsley flakes, basil and pepper; stir and continue cooking an additional hour.
