South Of The Border Pie
- 2 slices bacon
- 1 lb. ground beef
- 1 medium onion, chopped (1/2 c.)
- 1 (1 lb.) can tomatoes
- 1 (8 oz.) can tomato sauce
- 1 Tbsp. chili powder
- 1 tsp. salt
- 1 pkg. Jiffy corn muffin mix
- Saute bacon until crisp; drain on paper towel.
- Crumble; set aside.
- Mix ground beef lightly with onion and brown.
- Add crumbled bacon, tomatoes, tomato sauce and seasonings.
- Heat to boiling.
- Prepare corn muffin mix, following label directions for muffins.
- Spread 1/2 batter evenly over bottom of greased shallow 6-cup baking dish.
- Spoon hot meat mixture over.
- Drop remaining batter by tablespoon on top.
- Bake in moderate oven at 375u0b0 for 35 minutes or until top is puffed and golden brown.
- Bake at 375u0b0 for 35 minutes.
