Chocolate Mint Souffle
- 2 tsp. sugar
- 2 tsp. flour
- 3/4 c. milk
- 1 egg, slightly beaten
- 2 sq. (2 oz.) sweet baking chocolate
- 2 Tbsp. white creme de menthe
- 6 egg whites, stiffly beaten
- butter
- granulated sugar
- Combine 2 teaspoons sugar and flour in saucepan.
- Gradually stir in milk, mixing well.
- Stir in egg and egg yolk and cook over low heat until thickened, stirring constantly.
- Cool.
- Melt chocolate in creme de menthe.
- Stir into egg mixture.
- Fold in stiffly beaten egg whites.
- Spoon into 4 (8 ounce) souffle cups which have been lightly buttered and sprinkled with granulated sugar.
- Bake in a pan of hot water at 350u0b0 for 20 minutes or until souffle tests done (a silver knife inserted in center comes out clean when done).
- Serve at once.
- Yields 4 servings.
