Tacos
- 1 medium sized onion, chopped (1/2 c.)
- 1 clove garlic, crushed
- 2 Tbsp. vegetable oil
- 1 lb. ground round or chuck
- 1 large tomato, peeled and chopped (1 c.)
- 1 tsp. leaf oregano, crumbled
- 1 tsp. salt
- 1/8 tsp. pepper
- vegetable oil (for frying)
- 1 pkg. frozen tortillas (12)
- 1 small head lettuce, shredded (about 2 c.)
- 2 c. Cheddar cheese, shredded (8 oz.)
- 3 medium sized tomatoes, peeled and chopped
- bottled hot pepper sauce
- Make Beef Filling:
- Saute onion and garlic in the 2 tablespoons of oil until soft, about 5 minutes.
- Add ground beef and cook until brown.
- Add tomato, oregano, salt and pepper.
- Cook, stirring frequently, about 10 minutes or until thick and heated thoroughly.
