Meatballs And Rice
- 1 large onion
- 1 large green pepper
- 1 rib celery
- 2 lb. ground beef
- 1 beaten egg
- 2 Tbsp. cream
- Worcestershire sauce
- Tabasco sauce (optional)
- pinch of sugar
- salt and pepper
- 1 1/2 c. whole tomatoes
- 1 Tbsp. roux (optional)
- chopped parsley
- shallots
- Chop fine the first 3 ingredients.
- Mix 1/4 of this with meat, rice, eggs, seasonings and cream.
- Shape into balls.
- Roll lightly in flour and a bit of paprika.
- Fry to copper color; add remaining onions to drippings.
- Cook until lightly brown.
- Add tomatoes and water.
- Simmer slowly for about 1 to 1 1/2 hours.
- Add parsley and shallots.
- Cook about 10 more minutes.
