Meatballs And Rice

  1. Chop fine the first 3 ingredients.
  2. Mix 1/4 of this with meat, rice, eggs, seasonings and cream.
  3. Shape into balls.
  4. Roll lightly in flour and a bit of paprika.
  5. Fry to copper color; add remaining onions to drippings.
  6. Cook until lightly brown.
  7. Add tomatoes and water.
  8. Simmer slowly for about 1 to 1 1/2 hours.
  9. Add parsley and shallots.
  10. Cook about 10 more minutes.
