Veggie Chili
- 2 cans Ro-Tel
- 2 (16 oz.) cans tomatoes
- 2 small cans tomato paste
- 1/2 pkg. taco seasoning
- 2 Tbsp. chili powder
- 2 tsp. sugar substitute
- 1 Tbsp. parsley
- 1/2 tsp. cloves
- 1 can each: Great Northern, pinto and kidney or red beans
- 1 lb. each: ground turkey, ground round and turkey sausage
- 2 to 3 cloves garlic
- 4 green onions
- 1 small yellow onion
- 4 carrots
- 3 celery ribs
- 3 zucchini
- 2 yellow squash
- 1 green pepper
- Chop coarsely all vegetables and steam until just tender. Saute garlic and onions in sprayed skillet until clear.
- Remove and brown all meat.
- Place all ingredients into a covered roaster and stir.
- (Crock-pots may also be used.) Roaster:
- Bake at 250u0b0 for 4 to 5 hours.
- Crock-pot:
- Low, 8 to 10 hours.
