White Christmas Pie

  1. Soften gelatin in 1/4 cup cold water.
  2. Mix together in saucepan sugar, flour, salt and 1 1/2 cups milk.
  3. Stir in gradually 1 1/2 cup milk; cook over low heat, stirring until it boils.
  4. Boil 1 minute.
  5. Remove from heat; stir in softened gelatin.
  6. Cool.
  7. When partially set, beat with rotary beater until smooth.
  8. Blend in vanilla and almond extract.
  9. Gently fold in whipping cream; carefully fold into a meringue of egg whites, sugar and cream of tartar.
  10. Fold in 1 cup of moist shredded coconut.
  11. Put into a baked pie shell; sprinkle with coconut.
  12. Chill until set.
  13. Take out 20 minutes before serving.
