Stuffed Mushrooms Marsala
- 1/4 c. finely minced green pepper
- 1/4 c. finely minced onion
- 1/4 c. crisp bacon, crumbled
- 1/4 c. finely chopped mushroom stalks
- 3/4 to 1 c. seasoned bread crumbs
- 1 Tbsp. minced garlic
- 5 Tbsp. butter (for sauteing)
- salt and pepper to taste
- 6 Tbsp. butter (for sauce)
- 1/3 c. Marsala cooking wine
- 4 Tbsp. Parmesan cheese
- 1/2 medium lemon
- 12 large mushrooms (for stuffing)
- Saute onion, green pepper, mushroom stalks and garlic in butter until onion is transparent.
- Fry bacon until crisp.
- In a mixing bowl, combine sauteed vegetables, crumbled bacon and bread crumbs. Mix into a firm paste, adding small amounts of water as necessary. Fill mushroom caps with mixture and place them in a baking dish just large enough to hold all of them.
