Mushroom Quiche
- 1 (9-inch) pie shell
- 1/2 lb. fresh mushrooms, sliced
- 1/4 c. green onions, sliced
- 1 Tbsp. butter
- 4 oz. shredded Swiss cheese
- 4 eggs, beaten
- 1 c. half and half, light cream or milk
- 1/4 c. grated Parmesan cheese
- 1/2 tsp. salt
- 1/2 tsp. pepper
- In a skillet, over medium heat, cook mushrooms and onion in butter until mushrooms are lightly browned, six to eight minutes. Spread mushroom mixture evenly in bottom of pie shell.
- Sprinkle Swiss cheese over mushroom mixture.
- Beat together remaining ingredients, until they are well blended.
- Pour over mushroom mixture and cheese.
- Bake in preheated 375u0b0 oven until knife inserted in center comes out clean.
- Let stand 5 minutes before serving.
