Ham And Chicken In Noodle Soup(4 Servings)
- 4 pkg. dried Chinese egg noodles
- 1/4 slices ham, cut into thin strips 2-inches long
- 12 fresh snow peas, strung and parboiled in salt water and cut into thin strips
- 1 (2-inch) piece green onion, chopped finely
- 8 c. chicken stock
- 1/2 tsp. Chinese rice wine or sherry
- a little salt and pepper
- Sprinkle the chicken wings with the wine, salt and pepper. Steam for 20 minutes.
- Cut the meat into thin strips or tear it into shreds with your hands.
- Heat the stock and season with salt and pepper.
- Cook the noodles in a generous amount of water. Drain and place in a warmed tureen or individual deep soup bowls. Pour the hot soup over the noodles.
- Arrange the chicken, ham and snow peas on top and sprinkle with the green onion.
