Cheese Cake
- 1 box yellow cake mix
- 2 Tbsp. oil
- 2 (8 oz.) cream cheese, softened
- 1 c. sugar
- 4 eggs
- 1 1/2 c. milk
- 2 Tbsp. lemon juice
- 1 tsp. vanilla
- 1 can cherry, blueberry or strawberry filling (optional)
- Reserve 1 cup cake mix.
- In a large mixing bowl, combine remaining cake mix, 1 egg and oil.
- Mix until crumbly.
- Press on bottom and about halfway up sides of a 10-inch spring-form pan (or any deep pan or dish).
- Set aside.
- Beat cream cheese and sugar together.
- Add 3 eggs and reserved cake mix.
- Beat one minute on medium speed.
- On low speed, gradually add milk, lemon juice and vanilla.
- Mix until smooth.
- Pour into crust.
- Bake at 350u0b0 for 45 to 60 minutes.
- Cool.
- Top with choice of pie filling.
