Cheese Cake

• 1 box yellow cake mix
• 2 Tbsp. oil
• 2 (8 oz.) cream cheese, softened
• 1 c. sugar
• 4 eggs
• 1 1/2 c. milk
• 2 Tbsp. lemon juice
• 1 tsp. vanilla
• 1 can cherry, blueberry or strawberry filling (optional)

1. Reserve 1 cup cake mix.
2. In a large mixing bowl, combine remaining cake mix, 1 egg and oil.
3. Mix until crumbly.
4. Press on bottom and about halfway up sides of a 10-inch spring-form pan (or any deep pan or dish).
5. Set aside.
6. Beat cream cheese and sugar together.
7. Add 3 eggs and reserved cake mix.
8. Beat one minute on medium speed.
9. On low speed, gradually add milk, lemon juice and vanilla.
10. Mix until smooth.
11. Pour into crust.
12. Bake at 350u0b0 for 45 to 60 minutes.
13. Cool.
14. Top with choice of pie filling.
