Strawberry Dessert
- 3 pt. strawberry ice cream
- 3 c. water
- 3 pkg. (3 oz. each) strawberry flavor gelatin
- For garnish: whipped cream and fresh strawberries and raspberries
- Refrigerate the ice cream 30 to 40 minutes to soften.
- Have an 8 cup decorative ring mold ready.
- Bring water to boil in a large saucepan.
- Remove from heat, add gelatin and stir with a rubber spatula until completely dissolved.
- Stir in softened ice cream until completely dissolved.
- Stir in softened ice cream until blended and smooth.
- Pour into ring mold and refrigerate at least 8 hours until firm.
- To unmold, dip mold up to the rim in warm not hot water.
- Invert serving plate over mold.
- Turn right side up and shake mold gently from side to side to release dessert.
- Garnish with whipped cream and berries.
- Yields 8 cups, 12 servings.
