Beef Steak - Potato Scallop
- 1 lb. round steak, 1-inch thick
- flour
- 3 Tbsp. shortening
- 3 small onions, sliced thin
- 3 Tbsp. flour
- 1 1/2 tsp. salt
- 1/4 tsp. pepper
- dash of garlic salt
- 2 c. water
- 3 medium potatoes, pared and sliced thin
- salt
- paprika
- Heat oven to 350u0b0.
- Cut meat into 1-inch cubes; coat with flour.
- Brown meat in melted shortening in a skillet.
- Add onions; cook and stir until tender.
- Pour into ungreased 2-quart casserole; sprinkle with 3 tablespoons flour, salt, pepper and garlic salt.
- Pour water over mixture.
- Cover; bake 45 to 60 minutes or until meat is tender.
- Turn oven up to 450u0b0.
- Arrange potatoes on meat.
- Sprinkle with salt and paprika.
- Bake uncovered about 30 minutes longer.
