Yeast Raised Waffles
- 1/2 c. very warm water
- 1 (1/4 oz.) pkg. dry yeast
- 2 c. very warm milk
- 1/2 c. (1 stick) butter, melted
- 1 tsp. salt
- 1 tsp. sugar
- 2 c. all-purpose flour
- 2 eggs
- 1/2 tsp. baking soda
- 1 c. small curd cottage cheese
- 1 c. grated peeled cooking apple (1 large)
- 1/2 c. unbleached flour
- 1/4 c. wheat flour
- 1 Tbsp. honey
- 1 tsp. lemon juice
- 1/2 tsp. salt
- 1/2 tsp. cinnamon
- 4 eggs, separated (at room temperature)
- 1/8 tsp. cream of tartar
- melted unsalted butter
- powdered sugar
- Combine first 8 ingredients in bowl and blend in egg yolks. Beat whites and cream of tartar in another bowl until stiff, but not dry.
- Fold 1/4 whites into batter.
- Fold in remaining whites.
