Oyster Rockerfeller Casserole
- 1 qt. raw oysters
- 1/4 lb. butter
- 1 stalk celery, finely chopped
- 1 medium onion, finely chopped
- 1/2 c. chopped parsley
- 1 pkg. frozen spinach
- 1/4 tsp. aniseed
- 1/4 c. Worcestershire sauce
- 1/2 c. soft bread crumbs
- salt, pepper, cayenne to taste
- 1 c. grated Parmesan
- Preheat oven to 450u0b0.
- Grease 9 x 13 casserole.
- Drain oysters and arrange in single layer on bottom of dish.
- Melt butter and saute celery and onion until soft.
- Add parsley, spinach, aniseed, Worcestershire, bread crumbs, salt, and pepper. Spread this mixture over oysters and bake for 30 minutes.
- Remove and if necessary, pour off water.
- Sprinkle with cheese and a very thin layer of bread crumbs and bake another 10 minutes or until browned.
- Serves 6.
