Golden Carrot Fruitcake

  1. In a bowl, combine oil and sugar. Add eggs, one at a time, beating well after each addition. Combine the flour, baking powder, baking soda, cinnamon and salt; add to the egg mixture. Beat until smooth. Stir in remaining ingredients.
  2. Pour into two greased and floured 9x5-in. loaf pans. Bake at 350u0b0 for 1 hour or until a toothpick inserted in the center comes out clean. Cool in pans for 10 minutes; remove to a wire rack to cool completely.
