Mincemeat Cookies(About 1890, From My Mother'S Cookbook)
- 1/2 c. shortening, butter or butter-flavored Crisco
- 1 c. packed brown sugar
- 1 egg
- 1/2 c. applesauce
- 1/2 tsp. vanilla
- 1/2 tsp. lemon extract
- 1 Tbsp. brandy (optional)
- dash of nutmeg
- 2/3 c. mincemeat
- 1 1/2 c. all-purpose flour
- 1 tsp. baking powder
- 1/4 tsp. salt
- 1/4 c. milk
- 1/2 to 2/3 c. chopped pecans
- Cream shortening, add sugar and mix.
- Add egg, slightly beaten, and seasonings.
- Beat together until blended.
- Sift dry ingredients together; add mincemeat and nuts alternately with milk to first mixture.
- Drop by teaspoons onto an oiled cookie sheet leaving an inch or so between cookies.
- Bake at 375u0b0 for 10 to 12 minutes. Yields about 2 1/2 to 3 dozen cookies.
