Pasta Fasoli Soup(Low-Fat)
- 1 lb. ground turkey or lean beef
- 1 large can tomatoes
- 1 can Ro-Tel tomatoes
- 1 can navy beans
- 3 beef bouillon cubes
- 1 onion, chopped
- 2 stalks celery, chopped
- 2 carrots, chopped
- 1 tsp. basil
- 1 1/2 tsp. oregano
- 2 cloves garlic
- 1/2 lb. ditalini or small elbow macaroni
- Brown turkey or beef in large pot.
- Add onion and saute.
- Add tomatoes, Ro-Tel, bouillon cubes, celery, carrots and seasonings; simmer 20 minutes.
- Cook macaroni al dente (firm).
- Add beans to soup mixture; simmer for 15 minutes.
- Add pasta; allow to stand, covered, for a few minutes before serving.
- A cup of water may be added to achieve correct consistency.
- This is adapted from the soup served at the Olive Garden.
