Paella Casserole(Chicken, Shrimp, Sausage And Rice)
- 2 cloves garlic, chopped
- 1/2 c. olive oil
- 3 to 4 lb. chicken pieces
- 2 c. rice (uncooked)
- 2 tsp. saffron
- 4 c. hot chicken stock
- 12 raw shrimp
- 1 c. peas
- 2 sweet red or green bell peppers, sliced
- 8 thin slices chorizo or highly seasoned sausage, in small pieces
- 12 clams in shell (optional)
- Preheat oven to 350u0b0 (176u0b0C).
- In a Dutch oven, lightly saute garlic in oil over moderate heat.
- Remove garlic.
- Brown chicken in same oil.
- When brown, set chicken aside.
- Add rice to oil; stir until browned.
- Dissolve saffron in chicken stock (hot), then add all ingredients together, except shrimp and clams.
- Bake for 30 minutes.
- Arrange shrimp and clams on top; bake for an extra 10 minutes.
