Christmas Fruit Cake
- 2 c. seeded raisins
- 4 c. seedless raisins
- 2 c. candied cherries, cut
- 2 c. citron, sliced
- 1 c. candied pineapple, sliced
- 3 c. walnuts, broken
- 1/2 c. fruit juice
- 5 c. all-purpose flour
- 1 1/2 tsp. salt
- 3 tsp. baking powder
- 1 lb. shortening
- 2 c. white sugar
- 1 c. brown sugar
- 3 tsp. cinnamon
- 2 tsp. cloves
- 1 tsp. allspice
- 2 tsp. mace
- 1 tsp. vanilla
- 6 eggs, well beaten
- Cream shortening; add sugar.
- Mix well; add salt and beaten eggs.
- Add fruit and nuts which have been cut in small pieces and mixed with 1/2 cup flour.
- Add sifted dry ingredients and fruit juice.
- Mix well.
- Bake in paper lined loaf tins at 275u0b0 for 3 hours.
- Makes 9 pounds of cake.
