Shanghai Party Pleasers
- 1 (20 oz.) can crushed pineapple in juice (undrained)
- 1/4 c. firmly packed brown sugar
- 2 Tbsp. each cornstarch and lite soy sauce
- dash of ginger
- 1 c. water
- 2 Tbsp. margarine
- 1 lb. finely chopped, cooked, skinned turkey or chicken
- 3/4 c. Quaker Oat Bran hot cereal (uncooked)
- 1/3 c. each plain low-fat yogurt and sliced green onions
- 1/3 c. finely chopped water chestnuts, drained
- 1 egg white, slightly beaten
- 1 tsp. ginger
- Drain pineapple, reserving juice.
- In medium saucepan, combine brown sugar, cornstarch and ginger; mix well.
- Add combined pineapple juice, water, 1/4 cup pineapple and margarine; mix well. Bring to a boil over medium-high heat; reduce heat.
- Simmer about 1 minute, stirring frequently or until sauce is thickened and clear. Set aside.
- Heat oven to 400u0b0.
- Lightly spray rack of 13 x 9-inch baking pan with vegetable oil cooking spray or oil lightly. Combine turkey, oat bran, yogurt, water chestnuts, onions, soy sauce, egg white, ginger, salt and remaining pineapple; mix well. Shape into 1-inch balls.
- Place on prepared rack.
- Bake 20 to 25 minutes or until golden brown.
- Serve with pineapple sauce.
