Aunt Melba'S Deluxe Tortellini Soup
- 1 lb. Italian sausage
- 1 c. onion, chopped
- 2 garlic cloves, chopped
- 2 cans beef broth
- 1 c. water
- 1 large can tomatoes
- 1 c. sliced carrots
- 1/2 c. sliced celery
- 1/2 tsp. basil
- 3 tsp. parsley
- 1/2 tsp. oregano
- 1 medium green pepper, chopped
- 1 1/2 c. sliced zucchini
- 8 oz. stuffed cheese tortellini
- 1 can lentil soup (optional)
- Remove casing from sausage and brown; add onions and garlic and saute.
- Add beef broth, water, tomatoes, celery, basil, parsley, oregano, green pepper and soup.
- Simmer for 40 minutes. Add tortellini and zucchini and boil for another 30 minutes. Serve with Parmesan cheese and breadsticks.
