Grilled Ginger Chicken Breasts

  1. Arrange chicken breasts in a shallow 9 x 13-inch baking dish. Combine remaining ingredients in a small bowl. Mix well and pour over chicken. Cover and chill for 4 hours, turning every hour. Place chicken on rack and grill over hot coals for 5 minutes per side, basting twice with the marinade mixture. Transfer chicken to a warm platter and garnish. Garnish with cherry tomatoes and parsley.
  2. Makes 6 to 8 servings.
