Grilled Ginger Chicken Breasts
- 6 chicken breast halves, boned
- 1/4 c. soy sauce
- 3 Tbsp. dry white wine
- 2 Tbsp. lemon juice
- 2 Tbsp. cooking oil
- 3/4 tsp. fines herbes, crushed
- 1/2 tsp. ginger root, grated
- 1 clove garlic, minced
- 1/4 tsp. onion powder
- dash of pepper
- cherry tomatoes for garnish
- fresh parsley for garnish
- Arrange chicken breasts in a shallow 9 x 13-inch baking dish. Combine remaining ingredients in a small bowl. Mix well and pour over chicken. Cover and chill for 4 hours, turning every hour. Place chicken on rack and grill over hot coals for 5 minutes per side, basting twice with the marinade mixture. Transfer chicken to a warm platter and garnish. Garnish with cherry tomatoes and parsley.
- Makes 6 to 8 servings.
