Cashew Chicken

  1. Sprinkle cornstarch over chicken; add soy sauce and let marinate for 15 minutes.
  2. Heat 1 1/2 teaspoons oil; brown chicken and remove from skillet.
  3. In same skillet, heat remaining oil; add onion and cashews and stir-fry until onion is tender.
  4. Add mushrooms and garlic; stir-fry for 1 minute.
  5. Return chicken to skillet; add water chestnuts and reserved liquid.
  6. Cover and cook until heated through, one to two minutes.
  7. Serve sprinkled with green onion.
