Skillet Pork Chops 'N Rice
- 2 Tbsp. vegetable oil
- 1 medium onion, sliced
- 1/4 c. sliced celery
- 4 pork chops (1/2-inch thick)
- salt and pepper
- 1 1/2 c. water
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 2 (8 oz.) cans tomato sauce
- 2 Tbsp. brown sugar
- 1 c. regular uncooked rice
- Lightly saute onion and celery in oil.
- Sprinkle chops with salt and pepper; add to skillet and brown on both sides.
- Remove chops.
- Add water, brown sugar, salt, pepper and 1 1/2 cans tomato sauce.
- Stir and bring to boiling point.
- Add rice and stir. (There will be a lot of liquid, but rice will absorb it.)
- Return chops to skillet, cover and simmer 30 minutes.
- Pour on remaining tomato sauce, cover and cook 15 minutes longer.
- Makes 4 servings.
