Reuben Delight
- 2 (16 oz.) cans sauerkraut
- 1 (16 oz.) pkg. skinny noodles, cooked
- 2 cans cream of mushroom soup
- 1/2 c. chopped onion
- 3 tsp. yellow mustard
- 1 1/3 c. milk
- 1 (16 oz.) pkg. Swiss or Mozzarella cheese
- 1 can corned beef
- 1 1/2 c. bread crumbs
- 3 Tbsp. melted butter or oleo
- Grease a 9 x 13-inch baking dish.
- Wash and drain sauerkraut and place in the baking dish evenly spread.
- Cook noodles, drain well and spread evenly over sauerkraut.
- Mix together soup, onions, mustard and milk.
- Pour over noodles evenly.
- Sprinkle cheese over noodles.
- Crumble corn beef evenly over cheese.
- Mix bread crumbs with melted butter and spread on top of corned beef. Bake at 250u0b0 for 1 to 1 1/2 hours.
- Take a fork and prick at 45 minutes.
