Teddie'S Tortissa Casserole
- 1 c. chicken or turkey, cooked and cubed
- 1 c. Colby cheese, shredded
- 1 small can green chilies, chopped
- 1 can cream of mushroom soup
- 1/4 tsp. salt
- 1 egg, beaten
- 1/2 large onion, minced
- 1 small can ripe olives, sliced
- 3/4 c. milk
- 1/2 c. sour cream
- 1/4 tsp. red pepper
- 12 corn tortillas (may not take this many)
- Cut tortillas into 1-inch strips and set aside.
- Beat eggs, red pepper, salt, sour cream, mushroom soup and milk.
- Butter a square Pyrex dish and place 3 layers of tortillas, onion, chicken or turkey, green chili, olives and cheese.
- Cover each layer with sour cream mixture and end up with cheese.
- Bake, covered, in a 325u0b0 oven for about 45 minutes.
- This casserole is excellent fresh, but it is not as good warmed.
