Chocolate Coconut Slices

  1. In a small bowl, cream butter and confectioners' sugar until light and fluffy. Beat in the egg, chocolate and vanilla. Combine flour and baking soda; gradually add to creamed mixture and mix well. Refrigerate for 1 hour.
  2. In another bowl, beat cream cheese and vanilla until smooth. Stir in coconut and nuts. Refrigerate for 1 hour.
  3. Shape dough into an 8-1/2x6-in. rectangle. Shape coconut mixture into an 8-1/2-in. log; place on dough. Wrap dough around filling, sealing the seam. Wrap in plastic and refrigerate for 2-3 hours or until firm.
  4. Cut into 1/4-in. slices. Place 2 in. apart on parchment paper-lined
  5. . Bake at 375u0b0 for 10-12 minutes or until set. Remove to wire racks.
