Linguini With Mixed Vegetables

  1. Blanch carrots for 3 minutes in boiling water.
  2. Blanch zucchini for 1 minute.
  3. Rinse in cold water and drain.
  4. Set aside. In a separate saucepan, cook linguini in boiling water according to package directions.
  5. Rinse under cold running water, then drain and set aside.
  6. In a skillet, melt butter and cook garlic and green onion until soft.
  7. Add carrots and zucchini and saute for 3 minutes.
  8. Add basil, parsley and spinach.
  9. Season with salt and pepper.
  10. Pour vegetable juice and tomatoes into mixture and heat. Fold in linguine.
  11. Stir and serve.
  12. Serves 6 to 8.
