Mixed Vegetable Dijon
- 1 c. cauliflower florets
- 2 c. broccoli florets and thinly sliced stems
- 3/4 c. red bell pepper, chunked
- 1/2 c. low sodium chicken broth
- 2 Tbsp. minced red onion
- 1/4 tsp. liquid hot pepper sauce
- 2 tsp. margarine
- 1 Tbsp. flour
- 1/2 c. nonfat milk
- 1 1/2 tsp. Dijon mustard
- 1 tsp. honey
- Cook cauliflower in boiling water for 3 minutes.
- Add broccoli and red pepper, cooking 30 seconds longer.
- Drain.
- In large nonstick skillet, cook onion in margarine until soft.
- Add flour; cook, stirring, for 1 minute.
- Gradually whisk in chicken broth and milk.
- Add remaining ingredients.
- Cook, whisking, 2 to 3 minutes, until sauce boils and thickens.
- Pour over vegetables.
