Almond Fruit Bars
- 1 1/3 c. sifted flour
- 3/4 tsp. baking powder
- 1/4 tsp. salt
- 1 (6 oz.) pkg. butterscotch pieces
- 1/2 c. butter
- 1/2 c. brown sugar, firmly packed
- 1 c. slivered almonds, chopped
- 1/2 c. finely chopped candied cherries
- 1/2 c. golden raisins, finely chopped
- 2 eggs, beaten
- 1 Tbsp. sugar
- 1 Tbsp. grated orange peel
- Sift together flour, baking powder and salt.
- Melt in saucepan over low heat butterscotch pieces and butter.
- Remove from heat and add brown sugar and sifted ingredients.
- Press into bottom of 13 x 9 x 2-inch pan.
- Bake at 325u0b0 for 15 minutes.
- Combine and spread over hot crust almonds, candied cherries, raisins, eggs, sugar and orange peel.
- Return to oven and bake 15 to 20 minutes more.
- Remove from oven and cool.
- Cut into 1 1/2 x 2-inch bars. Makes about 36.
