Black Pepper Brownies
- 4 oz. (4 squares) unsweetened chocolate
- 6 oz. (1 1/2 sticks) sweet butter
- 1/8 tsp. salt
- 1 tsp. dry instant espresso or any other powdered instant coffee
- 1 tsp. black pepper, finely ground
- 1 tsp. vanilla
- 1 3/4 c. brown sugar, firmly packed
- 3 eggs (large or extra-large)
- 3/4 c. sifted all-purpose flour
- 4 oz. walnuts or pecans, broken into large pieces
- Preheat oven to 375u0b0.
- Prepare a 9-inch square cake pan as follows:
- turn pan upside down.
- Cut a 12-inch square of foil, center it over the inverted pan and fold the sides and
- corners down.
- Remove the foil, turn the pan upright and place the foil in the pan.
- In order not to tear the foil, use a folded towel or pot holder to press the foil in the pan firmly.
- Brush with very soft or melted butter.
- Set pan aside.
