Different Chicken And Dressing
- 6 chicken drumsticks
- 6 chicken thighs
- 1/2 tsp. salt
- 1/4 tsp. pepper
- 3 Tbsp. butter or margarine
- 1/2 lb. lean pork sausage
- 3/4 c. chopped onion
- 3/4 c. chopped celery
- 3/4 c. chopped green pepper
- 1 c. uncooked rice
- 1 (12 oz.) can whole kernel corn
- 2 c. chicken broth
- Sprinkle chicken with salt and pepper.
- In a large ovenproof fry pan, place butter and melt over medium heat.
- Add chicken pieces, 6 at a time, and brown on both sides.
- Remove browned chicken from pan and pour off drippings.
- In same pan, place sausage, onion, celery and green pepper.
- Cook, stirring often, about 5 minutes or until sausage is crumbly and vegetables are tender.
- Pour off drippings.
- To sausage mixture in pan, add rice, corn and chicken broth.
- Stir well and bring to a boil.
- Remove from heat and arrange chicken on top of rice mixture.
- Cover and bake in a 350u0b0 oven for 30 to 45 minutes or until chicken is done.
