Pineapple Lime Gelatin

  1. In a bowl, add 1 cup boiling water to gelatin; stir 2 minutes to completely dissolve. In a small saucepan, combine marshmallows and remaining water; cook over low heat until blended, stirring occasionally. Stir into gelatin. Refrigerate until partially set.
  2. In a large bowl, beat cream cheese until smooth. Beat in pineapple. Fold in gelatin mixture, whipped cream, pecans and, if desired, food coloring. Pour into a 6-cup mold coated with cooking spray. Refrigerate, covered, until set. Unmold onto a serving plate.
