Fruited Rice
- 1 c. dried apricots, cut into strips
- 2 c. long grain white rice,
- chicken broth
- 1 c. wild rice
- 1 medium onion, finely chopped
- 1 large apple, peeled, cored and finely chopped
- 1 large pear, peeled, cored and finely chopped
- 1/2 c. butter or margarine
- 1 c. slivered toasted almonds
- cilantro (optional)
- salt and pepper
- Cook white rice, substituting chicken broth for water.
- Cook wild rice.
- Combine cooked rices.
- Saute onion, apple and pear in butter or margarine, just until soft, about 5 minutes.
- Stir in apricots and almonds; saute briefly.
- Toss rices, fruit mixture, cilantro, salt and pepper.
- Place in lightly buttered baking dish. Cover with foil.
- Bake at 375u0b0 for 30 minutes.
- Serves 8.
