Fruited Rice

  1. Cook white rice, substituting chicken broth for water.
  2. Cook wild rice.
  3. Combine cooked rices.
  4. Saute onion, apple and pear in butter or margarine, just until soft, about 5 minutes.
  5. Stir in apricots and almonds; saute briefly.
  6. Toss rices, fruit mixture, cilantro, salt and pepper.
  7. Place in lightly buttered baking dish. Cover with foil.
  8. Bake at 375u0b0 for 30 minutes.
  9. Serves 8.
