Low-Fat Rice Pudding
- 1 qt. low-fat milk
- 1/2 c. uncooked white rice
- 1/2 c. raisins
- 1 large egg
- whites from 2 large eggs
- 1/3 c. sugar
- 1 c. evaporated skim milk
- 1 1/2 tsp. vanilla
- nutmeg
- In large heavy saucepan, combine milk, rice and raisins.
- Bring to boil over medium heat.
- Reduce heat and boil gently, uncovered, about 20 minutes, stirring often until rice is almost tender.
- Meanwhile, in medium bowl, whisk egg, egg whites, sugar and evaporated milk until blended.
- Gradually add egg mixture to rice mixture, stirring constantly.
- Cook over medium-low heat about 5 minutes or until mixture is slightly thickened.
- Remove from heat and stir in vanilla.
- Pour into shallow 6-cup dish. Serve warm or cold sprinkled with nutmeg.
- One-half cup serving has 190 calories (2 grams fat, 30 mg cholesterol).
