Honey Oatmeal Bread(2 Loaves)
- 1 c. boiling water
- 1 1/2 c. oats
- 1/3 c. honey
- 1/4 c. margarine
- 1 Tbsp. salt
- 2 pkg. dry yeast
- 1 c. warm water
- 4 1/2 to 5 c. flour
- 1 c. sour cream
- 2 eggs
- Combine boiling water, oats, honey, margarine and salt.
- Stir until melted.
- Add sour cream.
- Cool until lukewarm.
- Soften yeast in warm water.
- Add yeast, eggs and 2 cups flour to oat mixture. Beat until smooth.
- Add enough flour to make a stiff dough.
- Knead until smooth and elastic.
- Place in greased bowl.
- Cover and let rest 20 minutes.
- Divide in half, shape each half into a loaf. Place each in a greased loaf pan.
- Cover with plastic wrap and refrigerate 12 to 24 hours.
- When ready to bake, remove from refrigerator 10 minutes.
- Bake at 375u0b0 for 40 to 45 minutes. Remove from pans and cool on racks.
