Cranberry Apple Cake
- 1 3/4 c. brown sugar
- 1/2 c. oil
- 2 Tbsp. orange juice
- 2 eggs
- 1 tsp. vanilla
- 2 c. flour, sifted
- 1 tsp. baking soda
- 1/2 tsp. allspice
- 1 tsp. cinnamon
- 1 tsp. salt
- 1/2 tsp. nutmeg
- 2 c. apples, peeled and chopped
- 2 c. whole fresh cranberries
- 1/2 c. chopped nuts
- 2 1/2 c. confectioners 10x sugar
- 3 oz. cream cheese
- 1 Tbsp. butter
- 1 Tbsp. plus 1 1/2 tsp. milk
- 1/2 tsp. cinnamon
- 1 tsp. vanilla
- Peel apples; chop and set aside.
- Blend together sugar, oil, orange juice, eggs and vanilla.
- Sift together flour, baking soda, cinnamon, salt, nutmeg and allspice.
- Add to the creamed mixture. Add apples, nuts and cranberries and mix well; do not beat, just stir.
- Put in greased 9 x 13-inch pan.
- Bake 35 to 40 minutes at 350u0b0.
- Let cool.
- Frost with:
brown sugar, oil, orange juice, eggs, vanilla, flour, baking soda, allspice, cinnamon, salt, nutmeg, apples, fresh cranberries, nuts, cream cheese, butter, milk, cinnamon, vanilla
