Bill'S Potato Salad
- 4 to 5 lb. medium potatoes, peeled and boiled
- 4 large eggs, hard-boiled and peeled
- 1/2 c. fresh chopped onion (preferably red)
- 1/2 c. chopped celery
- 1/2 c. chopped carrots
- 1 c. sweet pickle relish
- 1/4 c. sugar
- 1 tsp. salt
- 1/2 tsp. ground black pepper
- 1 c. Kraft French dressing
- 1 c. Kraft Thousand Island dressing
- 1 c. Kraft Miracle Whip or mayonnaise
- dash of paprika
- Drain the potatoes well and mash all ingredients except eggs and paprika while potatoes are still hot.
- Chop 3 eggs and stir in with a spoon.
- If mixture seems dry, add salad dressing until desired consistency is reached.
- Slice the fourth boiled egg and spread around top.
- Dust top with paprika.
