Pasta Gratin

  1. Saute onion in oil.
  2. Add sausage; cook until brown.
  3. Season with salt and thyme.
  4. Add mushrooms, garlic and nutmeg; cook 3 to 4 minutes.
  5. Drain fat.
  6. Add wine; increase heat and reduce until nearly dry, stirring with wooden spoon.
  7. Add tomatoes; reduce until thick, 4 to 5 minutes.
  8. Add pepper and parsley; set aside. Boil pasta in salted water until nearly al dente.
  9. Rinse under cold water.
