Pasta Gratin
- 2 Tbsp. olive oil
- 1 medium-large onion, chopped
- 1 lb. sweet Italian sausage, casings removed and meat crumbled
- salt to taste
- pinch of dried thyme
- 1 lb. tube shaped pasta
- 1 Tbsp. butter
- 1 1/4 c. heavy cream
- 1/4 lb. sliced mushrooms
- 4 cloves garlic, minced
- pinch of nutmeg
- 1/4 c. white wine
- 28 oz. chopped canned tomatoes
- pepper to taste
- 1/4 c. chopped fresh parsley
- 1 1/2 c. freshly grated Parmesan
- Saute onion in oil.
- Add sausage; cook until brown.
- Season with salt and thyme.
- Add mushrooms, garlic and nutmeg; cook 3 to 4 minutes.
- Drain fat.
- Add wine; increase heat and reduce until nearly dry, stirring with wooden spoon.
- Add tomatoes; reduce until thick, 4 to 5 minutes.
- Add pepper and parsley; set aside. Boil pasta in salted water until nearly al dente.
- Rinse under cold water.
