Carrot Cake(For Everybody!)

  1. Beat eggs; add vegetable oil.
  2. Sift together dry ingredients. Add dry ingredients to eggs and oil.
  3. Add apple juice concentrate. Stir in carrots, raisins and 1/2 cup walnuts.
  4. Spray an 8 1/2 x 11-inch baking pan with nonstick spray.
  5. Pour batter into pan. Sprinkle remaining 1/2 cup walnuts over top.
  6. Bake in preheated oven at 325u0b0 for 40 to 45 minutes or until done.
  7. Yield:
  8. 32 slices.
  9. One slice equals 180 calories.
