St. Joseph'S Cream Puffs(Sfinge Di San Giuseppe)

  1. Boil water and butter in a saucepan.
  2. Add sifted flour and stir constantly until smooth.
  3. Cook over medium flame until mixture leaves side of pan clean, about 2 minutes, stirring constantly. Remove from heat and allow to cool slightly.
  4. Add eggs, one at a time, beating well after each addition.
  5. Add grated rind and blend. Drop by tablespoons in ungreased cookie sheet 2 inches apart and bake in moderate oven at 350u0b0 until puffs are light, about 30 minutes.
  6. Remove from oven and cut opening in the middle of top. Cool thoroughly and fill with filling.
  7. Decorate the tops with candied or maraschino cherries.
