Baked Redfish With Oysters
- 2 Tbsp. butter
- 3 redfish fillets, cut in half
- 1 small onion, sliced
- 1/2 c. Italian plum tomatoes, chopped
- 2 cloves fresh garlic, minced
- 1 tsp. dill weed
- 1 tsp. basil
- 1 doz. oysters, liquor reserved
- 1/4 c. parsley, chopped
- salt to taste
- black pepper to taste
- 1/2 c. dry vermouth (white)
- Preheat oven to 375u0b0.
- Butter a baking dish.
- Place fillets in dish so they don't touch.
- Spread onion, tomatoes, garlic and herbs over fillets. Add vermouth.
- Add oysters and liquor.
- Put dish in oven 8 to 10 minutes.
- Remove fish and place on platter; cover.
- Reduce sauce over high heat for 2 minutes. Pour sauce over fish. Garnish with fresh parsley and serve.
