Art'S Sausage Muffins
- 1 c. raisins
- 1 lb. hot or mix of hot and mild sausage
- 1 1/2 c. brown sugar
- 1 1/2 c. white sugar
- 2 eggs
- 1 c. nuts, coarsely chopped
- 3 c. flour
- 2 tsp. dried ginger
- 1 tsp. cinnamon
- 1 tsp. baking powder
- 1 c. cold coffee
- 1 tsp. baking soda
- Simmer raisins in water 5 minutes.
- Drain.
- Saute sausage until almost cooked and drain off fat.
- Mix sausage, brown and white sugars and eggs.
- Add nuts and raisins.
- Mix flour, spices and baking powder.
- Stir baking soda into coffee and add flour mixture and coffee to sausage mixture.
- Spoon into muffin tins; bake at 350u0b0 for 25 to 30 minutes.
- Mixture also can be baked in a 9-inch tube pan and baked for 1 1/2 hours.
