King Ranch Chicken
- 1 Tbsp. chili powder
- 8 chicken breasts
- 1 can mushroom soup
- 1 can cream of chicken
- 1 green bell pepper, chopped
- 1 large onion, chopped
- 8 oz. tortilla chips, crushed
- 1 1/2 c. grated Colby or Cheddar cheese
- 1 can Ro-Tel tomatoes
- 1/2 c. chicken broth
- Boil
- chicken
- and debone.
- Cut up meat in skillet with tablespoon of butter or oil.
- Cook onion, pepper, both cans of soup,
- tomatoes and chili powder.
- Simmer for 10 minutes.
- Add chicken
- meat.

- pour crushed chips in bottom.
- Pour
- chicken soup mixture on top of chips.
- Top with cheese.
- Bake at 350u0b0 for 40 minutes.
