Lemon Pudding Cake
- 1 pkg. white or yellow cake mix
- 1 pkg. instant lemon pudding
- 3/4 c. vegetable oil
- 3/4 c. water
- 4 eggs
- 2 c. powdered sugar
- 2 Tbsp. melted butter
- 2 Tbsp. water
- 3/4 c. orange juice
- In a large bowl, combine cake mix, pudding mix, oil and 3/4 cup water.
- Beat at medium speed for 2 minutes.
- Add eggs, one at a time, beating well after each egg.
- Pour into greased and floured 9 x 13-inch pan.
- Bake at 350u0b0 for 35 to 40 minutes. While cake is baking, mix powdered sugar, orange juice, butter and 2 tablespoons water.
- Mix well.
- When cake is done, take a serving fork and poke holes all over top of cake.
- Pour sugar-orange juice mixture over cake before it cools.
- Refrigerate before serving. May be garnished with Cool Whip.
