Czechoslovakian Christmas Cookies
- 1/2 lb. butter
- 1 c. granulated sugar
- 2 egg yolks
- 2 c. all-purpose flour
- 1 c. chopped walnuts
- 1/2 c. jam (strawberry, raspberry, apricot or whatever you like)
- small amount confectioners sugar
- Preheat oven to 325u0b0.
- Grease an 8-inch square baking pan.
- In a large mixing bowl, cream butter until soft.
- Gradually add sugar; mix until light and fluffy.
- Add egg yolks; blend well.
- Gradually add flour; mix thoroughly.
- Fold in chopped nuts.
- Batter will be thick.
- Spoon half the batter into the prepared baking dish. Spread jam evenly over dough.
- Gently cover with remaining dough. Bake for 1 hour or until lightly browned.
- Remove from oven; cool completely.
- Cut into small squares (about 12 to 16).
- Sprinkle with confectioners sugar before serving.
