Fruity Chicken Rice Salad

  1. Mix vinegar, honey, oil, sugar and salt in small bowl; set aside.
  2. Bring water, carrots and raisins to boil in medium saucepan.
  3. Stir in rice.
  4. Return to boil.
  5. Cover; reduce heat and simmer 5 minutes.
  6. Remove from heat and stir.
  7. Cover and let stand 5 minutes.
  8. Stir in remaining ingredients.
  9. Add honey dressing and toss.
  10. Refrigerate at least 1 hour.
  11. Makes 5 servings.
