Fruity Chicken Rice Salad
- 1/3 c. red wine vinegar
- 2 Tbsp. honey
- 1 Tbsp. oil
- 1 tsp. sugar
- 1/2 tsp. salt
- 1 1/4 c. water
- 1/2 c. diced carrots
- 1 1/2 c. Minute instant brown rice
- 1/2 c. raisins
- 2 c. cooked diced chicken
- 1 c. red or green seedless grapes
- 2 Tbsp. chopped toasted almonds
- 1 Tbsp. chopped parsley
- Mix vinegar, honey, oil, sugar and salt in small bowl; set aside.
- Bring water, carrots and raisins to boil in medium saucepan.
- Stir in rice.
- Return to boil.
- Cover; reduce heat and simmer 5 minutes.
- Remove from heat and stir.
- Cover and let stand 5 minutes.
- Stir in remaining ingredients.
- Add honey dressing and toss.
- Refrigerate at least 1 hour.
- Makes 5 servings.
